Glazed Lemon Cake

Be sure to use fresh lemons and real butter for the full effect. (Of course.)
1/2 pound (2 sticks) sweet butter, softened
2 cups granulated sugar
3 eggs
3 cups unbleached, all-purpose flour, stirred or sifted
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
2 tightly packed Tbls. grated lemon zest (from 1 lemon)
2 Tbls. fresh lemon juice
Lemon Icing (recipe follows)
Preheat oven to 325 degrees F. Grease and flour a 10-inch tube pan.
Cream butter and sugar until light and fluffy. Beat in eggs, one at a time, blending well after each addition.
Sift together flour, baking soda and salt (I just stir them together). Stir dry ingredients into egg mixture alternatively with buttermilk, beginning and ending with dry ingredients. Add lemon zest and juice.
Pour batter into prepared tube pan. Set on the middle rack of the oven and bake for 1 hour and 5 minutes, or until cake pulls away from side of pan and a tester inserted in the center comes out clean.
Cool cake in the pan, set on a rack, for 10-15 minutes, then gently loosen top edge of cake from pan all the way around. Invert onto a rack, then spread immediately with the Lemon Icing, using a pastry brush to smooth out if needed. Below is the cake, fresh from the pan. At the very top is the cake with the lemon glaze all over it.
Lemon Icing
2 cups (1/2 pound) confectioners’ sugar (powdered sugar)
1/2 stick (4 Tbls) sweet butter, softened
2 Tbls. packed grated lemon zest (from 1 lemon)
1/4 cup fresh lemon juice
Cream butter and sugar thoroughly. Mix in lemon juice and zest; spread on warm cake. It helps to lay down some wax paper underneath the rack where the cake sits. This catches the drips from the frosting. You’ll definitely have some run-off.
Lemon Zucchini Pasta

Ingredients
1 pound small zucchini, rinsed, dried, and trimmed at both ends
1 teaspoon fine sea salt
1/4 cup Creamy Lemon-Chive Dressing
Fleur de sel
Directions
Using the julienne blade of a mandoline, slice zucchini into long, thin strips. Transfer zucchini to a colander set over a mixing bowl. Toss zucchini with salt. Let stand 15 minutes at room temperature.
Gently squeeze zucchini to extract excess water. Transfer to a bowl and toss with just enough dressing to evenly coat the zucchini. Season with fleur de sel and serve.
Creamy Lemon-chive dressing:
Ingredients
2 tablespoons freshly squeezed lemon juice
Fine sea salt
1 cup light cream
1/3 cup freshly minced chives
Directions
In a small jar, combine lemon juice and 1/2 teaspoon salt. Cover and shake until salt is dissolved. Add cream and chives; shake to blend. Season with salt. Store, covered and refrigerated, up to 1 week. Shake to blend before using.

Creamy Lemon Crumb Squares
from the Pioneer Woman

1 ⅓ cup all-purpose flour
½ teaspoons salt
1 teaspoon baking powder
1 stick (1/2 cup) butter, slightly softened
1 cup brown sugar (lightly packed)
1 cup oats
1 can (14 ounce) sweetened condensed milk
½ cups lemon juice
zest of 1 lemon
Preheat oven to 350 degrees.
Mix butter and brown sugar until well combined.
Sift together flour, salt, and baking powder.
Add oats and flour to butter/sugar mixture and mix to combine.
Press half of oat crumb mixture into the bottom of an 8 x 11 inch pan. You can use a 9 x 13 pan; it will just be thinner.
Mix together condensed milk, lemon juice, and lemon zest. Spread onto the bottom layer of the crumb mixture. The other half of the crumb mixture mix and knead together with clean hands so that the butter that you added earlier gets incorporated then crumble on top of lemon layer but don’t press.
Bake for 20 to 25 minutes, or until golden brown.
Allow pan to sit on counter for 30 minutes after baking. Cut into squares and refrigerate for a couple of hours or until cool.
Serve cool. Makes around one dozen.
Lemon Crinkle Cookies

Makes 2-3 dozen
Ingredients:
½ cups butter, softened
1 cup granulated sugar
½ teaspoons vanilla extract
1 whole egg
1 teaspoon lemon zest
1 Tablespoon fresh lemon juice
¼ teaspoons salt
¼ teaspoons baking powder
⅛ teaspoons baking soda
1-½ cup all-purpose flour
½ cups powdered sugar
Directions:
Preheat oven to 350 degrees. Grease light colored baking sheets with non-stick cooking spray and set aside.
In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest, and juice. Scrape sides and mix again. Stir in all dry ingredients slowly until just combined, excluding the powdered sugar. Scrape sides of bowl and mix again briefly. Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining dough.
Bake for 9-11 minutes or until bottoms begin to barely brown and cookies look matte {not melty or shiny}. Remove from oven and cool cookies about 3 minutes before transferring to cooling rack.
*If using a non-stick darker baking tray, reduce baking time by about 2 minutes.

Sticky Lemon Rolls with Lemon Cream Cheese Glaze
Makes 12 large breakfast rolls
Lemons, for dough, filling, glaze, and garnish
3 large lemons, at room temperature
For the dough:
1 envelope (0.25 ounces, or 2 1/2 teaspoons) active yeast
3/4 cup milk, warmed to about 100°F (warm but not hot on your wrist)
1/2 cup (1 stick) unsalted butter, very soft, plus 3 tablespoons more for roll assembly
1/4 cup white sugar
2 teaspoons vanilla extract
4 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon nutmeg
2 large eggs
For the sticky lemon filling:
1 cup sugar
1/4 teaspoon freshly-ground nutmeg
1/2 teaspoon powdered ginger
For the lemon cream cheese glaze:
4 ounces cream cheese, softened
1 cup powdered sugar
Prepare the lemons:
Zest and juice the lemons. Divide the zest into three equal parts. One part will be used in the dough, a second part in the filling, and the final part will be sprinkled on top of the baked rolls for appearance and flavor.
Divide the juice into two equal parts, and set aside. Half of the lemon juice will be used in the lemon-sugar filling for the rolls. The other half will be used in the glaze.
Make the dough:
In the bowl of a stand mixer sprinkle the yeast over the warmed milk and let it sit for a few minutes or until foamy. With the mixer paddle, stir the softened butter, sugar, vanilla, and one cup of the flour into this milk and yeast mixture. Stir in the salt, nutmeg, and one part (1/3) of the lemon zest. Stir in the eggs and enough of the remaining flour to make a soft yet sticky dough.
Switch to the dough hook and knead for about 5 minutes, or until the dough is elastic and pliable.
(If you do not have a stand mixer, stir together the ingredients by hand, then turn the soft dough out onto a lightly floured countertop. Knead the dough by hand (see this video for explicit instructions) for 5 to 7 minutes, or until the dough is smooth, pliable, and stretchy.)
Lightly grease the top of the dough with vegetable oil, and turn the dough over so it is coated in oil. Cover the bowl with plastic wrap and a towel and let the dough rise until nearly doubled — about one hour.
Make the filling:
In a small bowl, mix 1 cup sugar with the nutmeg and ginger, then work in the second part of the lemon zest (1/3) with the tips of your fingers until the sugar resembles soft sand. Slowly pour in one part (1/2) of the lemon juice, stirring. Stop when the sugar and lemon juice form a thick, clumpy mixture like wet sand. (You may use all of the reserved half of the lemon juice; you may stop before completely adding that half of the lemon juice, depending on how much juice you got from your lemons.)
Assemble the rolls:
Lightly grease a 13x9-inch baking dish with baking spray or butter. On a floured surface pat the dough out into a large yet still thick rectangle — about 10x15 inches.
Spread the dough evenly with 3 tablespoons of very soft unsalted butter, then spread the lemon-sugar mixture over top. Roll the dough up tightly, starting from the top long end. Stretch and pull the dough taut as you roll, to keep the lemon sugar firm inside. Cut the long dough roll into 12 even rolls. Pinch the bottom of each roll closed to help keep the lemon sugar inside, and place each one, open and cut side up, in the prepared baking dish.
Cover the rolls with a towel and let them rise for an hour or until puffy and nearly doubled. (You can also refrigerate the rolls at this point. Cover the pan tightly with plastic wrap or a towel, and place it in the refrigerator for up to 24 hours. When you are ready to bake the rolls, remove the pan from the fridge, and let them rise for an hour before proceeding with baking.)
Heat the oven to 350°F. Place the risen rolls in the oven and bake for 35 minutes or until a thermometer inserted into a center roll reads 190°F.
Make the glaze:
While the rolls are baking, prepare the glaze. In a small food processor (or with a mixer, or a sturdy whisk), whip the cream cheese until light and fluffy. Add the remaining part lemon juice and blend until well combined. Add the powdered sugar and blend until smooth and creamy.
Finish the rolls:
When the rolls are done, smear them with the cream cheese glaze, and sprinkle the final part (1/3) of the lemon zest over top to garnish. Let cool for at least 10 minutes before serving, but do serve while still warm.

Mini Lemon Tarts
Tart Crust
From The Silver Palate Cookbook
- 1 2/3 cup all-purpose flour
- 1/4 cup fine granulated sugar
- 1/2 teaspoon salt
- 1 tablespoons (1 1/4 sticks) unsalted butter, cold
- 2 egg yolks
- 1 teaspoon vanilla extract
- 2-3 teaspoons cold water
Directions
- Sift flour, sugar and salt into mixing bowl. Cut chilled butter into pieces into the bowl. Using your fingertips, quickly rub the butter and dry ingredients together until the mixture resembles coarse meal
- Stir egg yolks, vanilla and water together and add to the flour-butter mixture and blend in using a fork. Shape dough into a ball.
- Place the ball of dough on a pastry board. With the heel of your hand, smear about 1/4 cup of dough away from you into a 6-8 inch smear; repeat until all the dough has been dealt with. Scrape dough together; reform into a disk and wrap in plastic. Refrigerate for about 2 hours.
- Preheat oven to 400 degrees F. Spray a 24-cup mini muffin tin with cooking spray well so the crusts will not stick to the pan. Roll the dough out between 2 sheets of wax paper. Using a 2″ round cookie cutter, cut circles and tuck the dough into muffin cups, pressing with your fingertips so that the dough comes up the sides of the cup.
- Using a fork prick the bottoms of each dough cup. Then cut 3″ squares of foil and press them into the inside of the dough cups. Use pie weights, beans or rice or even pennies to weigh down the foil.
- Bake the crusts for about 10 minutes. Remove them from the oven and take out the foil and pie weights and then return the crusts to the oven for another 5-9 minutes until the crusts are lightly golden on the edges. Everyone’s oven is different so you really have to keep an eye on the crusts. It’s not so much about the time, but how they visually look. You don’t want an undercooked dough, and you don’t want the crust too dark as it will be very dry and crumbly.
Meyer Lemon Filling
Adapted from Joy of Baking
- 5 ounces of cream cheese at room temperature
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup freshly squeezed Meyer lemon juice (2-3 lemons)
- 1 tablespoon grated lemon zest
Directions
- Reduce the oven temperature to 350 degrees F.
- In a food processor or the bowl of an electric mixer, place the cream cheese and process until smooth. Add the sugar and process until incorporated. Add the eggs and process until thoroughly combined. Add the lemon juice and zest and process until well blended and smooth.
- Using a tablespoon, I spooned the mixture into the individual tarts, filling to the top.
- I baked the mini tarts for about 10 minutes. The tarts are done when the filling is set. It took my oven about 10 minutes.
- Let cool for about 15 minutes, then gently remove them from the pan. I sprayed the pan well so the tarts released very easily.
